Mango Lime Popsicles

Oh, my mango! Sweet Summer is here, but I can certainly see myself making these popsicles all year long. The sweetness of mango and the tangy flavor of lime is perfect. You can also freeze them in a loaf pan and just scoop them when ready to eat. The kids love popsicle sticks and they’re so much fun to make. If you’re not a big fan of mango – you can also substitute it with peaches or pineapple. The pineapple and coconut cream sure taste like kids-friendly Pinacolada.

Recipe

Ingredients:

1 mango

1 banana

Juice of one lime

1 13 oz. coconut cream

2 tablespoons maple syrup, add more if you desire

Instructions:

Combine all ingredients in a blender, and blend until smooth. Pour into popsicle mold and freeze overnight.

Ingredients
  

  • 1 ripe mango, sliced
  • 1 banana
  • Juice of one lime
  • 1 13 oz. canned coconut cream
  • 2 tablespoons maple syrup

Instructions
 

  • In a blender or food processor, combine mango, banana, lime juice, coconut cream, and maple syrup.
  • Blend until smooth. Pour the mixture into popsicle molds and refrigerate for 4 hours or overnight.
  • Tip: to remove the popsicle easily from the mold, turn the hot water from your kitchen sink and run the water over the popsicle mold for 30 seconds or until it starts to slide out.
