Instant Pot Goulash
I love my Instant Pot – don’t you? Just make sure to check the settings and refer to the manual for instructions on “how to use your Instant Pot” In this recipe I used 3 types of settings – Sauté, stew, and soup/broth.
Ingredients
8 oz cooked pasta
8 oz tender cut beef, cut into bite sized pieces
2 cups beef broth
1 carrot, diced
1 onion, chopped
3 garlic cloves, minced
1 bell pepper, deseeded, diced
1/4 teaspoon red chili pepper flakes, add more if you want more heat
1 tablespoon paprika
1 tablespoon tomato paste
handful of parsley
salt to taste
Instructions
-1. Set your Instant Pot to “sauté” add oil and when ready, add the beef and brown each side for few seconds.
-2. When the beef is done browning, add the onion and garlic, season with salt and chili pepper flakes. Add paprika and tomato paste, stir to combine.
-3. Add the beef broth, stir, cover, simmer for 10-15 minutes. Make sure to cancel out from “sauté” and turn on the “stew” setting.
-4. Let the steam out and remove the cover, face away from the pot when steam is being released. Be careful not to burn yourself. When the meat is tender, add the rest of the vegetables, stir to combine.
-5. Cancel the setting from “stew” and turn on “soup” simmer for about 2-3 minutes until the carrot is tender.
-6. Add the cooked pasta, stir to combine well, add fresh parsley. Remove from the pot, serve with garlic bread or garden salad.
