  • Pizza dough: If you’re making it from scratch here’s my Homemade Pizza Dough Recipe. Cut the dough into equal portions. You can also use a store-bought pizza dough. 
  • Pepperoni: Use half of the 6 oz. package per portion of the dough. If you want to substitute, other options are, Italian sausage (cooked), ham, or salami. 
  • Cheese: Shredded mozzarella, shredded mild or sharp cheddar, and Parmesan cheese. 
  • Spinach: Heat a skillet with oil, and cook the spinach until wilted. Cool before spreading onto the dough.

How To Make Pepperoni Pizza Rolls

STEP-BY-STEP

  1. PREP THE PIZZA DOUGH

    Prepare your pizza dough by rolling it out into a rectangular shape. You can make my Homemade Pizza Dough Recipe or use a store-bought.

  2. FILLING

    Lay the pepperoni around the dough, then sprinkle cheese evenly on top, leaving a small border around the edges. Next, add a layer of sauteed spinach on top of the cheese. After adding the spinach, sprinkle some Parmesan cheese over the top for an extra burst of flavor.

  3. ROLL UP THE DOUGH

    Then, carefully roll up the dough tightly, starting from one end and rolling towards the other end. Once rolled, slice the dough into individual rolls and place them on a baking sheet pan or cast iron skillet. Make sure to leave a little space between each roll to allow for rising. Cover with a kitchen towel or plastic wrap and rest for 30 minutes before baking.

  4. BAKE

    Preheat the oven to 400ºF. Brush them with egg wash. Finally, bake the pizza rolls in the oven until the dough is golden brown and the cheese is melted about 20 minutes.

HOW DO I PREVENT THE PIZZA ROLLS FROM GETTING SOGGY?

If adding sauce, make sure not to overfill them. Also, pre-cook any watery ingredients like mushrooms, or bell peppers before adding them to the rolls.

CAN I FREEZE THE PIZZA ROLLS FOR LATER?

Yes, you can freeze the assembled but unbaked pizza rolls on a baking sheet until firm. Then transfer them to a freezer bag. When ready to bake, simply place them on a baking sheet and bake from frozen, adding a few extra minutes to the baking time.

HOW DO I GET THE ROLLS TO BE CRISPY ON THE OUTSIDE?

For crispy pizza rolls, brush them with a little olive oil or melted butter before baking. You can also sprinkle some garlic powder or grated Parmesan cheese on top for extra flavor and crunch.

Ingredients
  

  • 1 pizza dough, homemade or store-bought
  • 3 oz or half of the package, about 30 pieces of traditional pepperoni
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded sharp or mild cheddar
  • 4 cups spinach, sauteed
  • 1/4 cup Parmesan cheese

EGG WASH

  • 1 egg yolk
  • 2 tablespoons heavy cream or whole milk

Instructions

  • Layer on the pepperoni, cheese, sauteed spinach, and a sprinkle of Parmesan cheese.
  • Then, carefully roll up the dough tightly, starting from one end and rolling towards the other end. Once rolled, slice the dough into individual rolls and place them on a greased cast iron skillet. Make sure to leave a little space between each roll to allow for rising.
  • Cover with a kitchen towel or plastic wrap. Rest the pizza rolls for 30 minutes before baking. Preheat the oven to 400ºF.
  • FOR THE EGG WASH: Combine the egg yolk and milk, then brush the pizza dough. Bake for 20 minutes or until golden brown and bubbling with melted cheese.

NOTE: To saute the spinach: Heat a pan with 2 tablespoons of oil over medium-high heat. Add the spinach and cook until wilted. Cool before adding to your pizza dough.
