Homemade Pepperoni Pizza Rolls

Small rolls of dough filled with pizza ingredients, such as cheese, pepperoni, and sauteed spinach.

Ingredients
  

  • 1 pizza dough, homemade or store-bought
  • 3 oz or half of the package, about 30 pieces of traditional pepperoni
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded sharp or mild cheddar
  • 4 cups spinach, sauteed
  • 1/4 cup Parmesan cheese

EGG WASH

  • 1 egg yolk
  • 2 tablespoons heavy cream or whole milk

Instructions
 

  • Start by rolling out the pizza dough. If you want to make it from scratch, here's my Homemade Pizza Dough Recipe.
  • Layer on the pepperoni, cheese, sauteed spinach, and a sprinkle of Parmesan cheese.
  • Then, carefully roll up the dough tightly, starting from one end and rolling towards the other end. Once rolled, slice the dough into individual rolls and place them on a greased cast iron skillet. Make sure to leave a little space between each roll to allow for rising.
  • Cover with a kitchen towel or plastic wrap. Rest the pizza rolls for 30 minutes before baking. Preheat the oven to 400ºF.
  • FOR THE EGG WASH: Combine the egg yolk and milk, then brush the pizza dough. Bake for 20 minutes or until golden brown and bubbling with melted cheese.

Notes

NOTE: To saute the spinach: Heat a pan with 2 tablespoons of oil over medium-high heat. Add the spinach and cook until wilted. Cool before adding to your pizza dough.
