- 1/2 cup creamy peanut butter, for unsweetened peanut butter, add about 1 tablespoon of powdered sugar
- 1/2 teaspoon fine sea salt
Instructions
- MELT THE CHOCOLATE: Line a mini cupcake pan with paper cups. Place the coconut oil and chocolate chips in a large bowl. Then, place them in a microwave for one minute. Stir every 10 seconds until the chocolate melts. Place the melted chocolate in a Ziplock bag, cut the tip of the bag, and start piping a small amount of melted chocolate into the bottom of the mini cupcake liners to create the base of the cups. Freeze for 5 minutes.
- PEANUT BUTTER FILLING: Mix the peanut butter and salt. If you're using unsweetened peanut butter, add about a tablespoon of powdered sugar. Stir until combined. Place the peanut butter mixture in a microwave for 45 seconds, and stir until melted. Place it in a Ziplock bag and pipe on top of the chocolate base. Freeze for 10 minutes.
- TO FINISH THE CUPS: Cover the top of more melted chocolate then freeze for another 10 minutes. Get creative by experimenting with different types of chocolate or adding toppings like sea salt or chopped nuts for extra flavor and texture.
