Filipino Picadillo
Old-time favorite Filipino dish. It’s a combination of ground beef, potatoes, carrot, peas, and raisins. Seasoned with soy sauce, fish sauce, and tomato paste.

What are the ingredients?
- GROUND BEEF – lean ground beef
- POTATOES – one large yellow or Yukon potato
- CARROT – one carrot, peeled and cubed
- AROMATICS – onion and garlic
- SEASONINGS – soy sauce, fish sauce, tomato paste, and a hint of brown sugar
- ADD AT THE END OF COOKING – green peas and rainsins
why browning the potato makes a difference?
- The potatoes render so much flavor when roasting or frying them in the pan. And it holds the shape better. The hight heat reacts with the starch, then it caramelize and starts browning. You’ll notice the differnce in taste of fried potatoes versus boiled potatoes. That’s why French fries are so good!
what is the difference between mexican picadillo and filipino picadillo?
- In Mexican Picadillo, they uses spices like chili powder, oregano, and cumin. In Filipino Picadillo, they uses soy sauce and fish sauce for flavorings. Both uses tomato paste or tomato sauce, but every Latin country has given its own twist to this popular dish. And this recipe is my version of “Filipino Picadillo”.

Filipino Picadillo
Equipment
- Wide skillet
- Spatula

Ingredients
- 3 tablespoons olive oil
- 1 large yellow or Yukon potato peeled, cube into bite-sized pieces
- 1 medium carrot, peeled, cubed into bite-sized pieces
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 pound lean ground beef
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons brown sugar
- 1/4 cup tomato paste
- 1 cup green peas
- 1/2 cup raisins
Instructions
- Heat a skillet with oil, add the potato and carrot, cook until golden brown. Remove from the pan and set them aside.
- Use the same skillet, add onion and garlic, saute until aromatic. Season with salt and pepper, stir to combine.
- Add the ground beef, cook until no longer pink. Add the soy sauce, fish sauce, brown sugar, and tomato paste, stir to combine. Simmer for 2 minutes, then add the potato and carrot back to the pan.
- Add the green peas and raisins, stir to combine. Remove from the skillet and serve with steamed rice.
