Easy Dinner Recipe

I know the feeling of coming home from a long day of work or when the kids have late evening activities. It can get overwhelming when it comes to cooking dinner, especially when everyone starts yelling “Mom what’s for dinner!”

I have a quick solution for you. A fuss-free dinner, this one-pan chicken and vegetable recipe is so simple. You can make them ahead of time and just heat them up when you’re ready to have dinner.

Here are quick tips for  getting your dinner done quickly:

  1. Cut your meat and veggies thinly so they cook quickly.
  2. Make your seasonings ahead of time. Combine your favorite spices, store them in a small jar, ready for you to use when you need them.
  3. Squeeze about 12 lemon juice in a mason jar, cover and refrigerate.  Use it anytime you need to flavor your dish. Fresh lemon juice is also very refreshing to add to your morning water.

Here are the quick instructions to this one-pan chicken and vegetable recipe:

  • Arrange your meat and veggies on a baking pan. Season them well, drizzle with olive oil and bake them.

  • Bake for 15-20 minutes or until the meat is cooked through.

  • You can have them for your 3 days of dinner. Place them in the individual containers, and just re-heat.
  • You can serve them with steamed brown rice or quinoa. You can also have some black beans and corn if you like.
