Cold Sesame Soba Noodles

This is an easy Soba Noodle Salad with a sweet and tangy soy-based sauce. Combined with sliced cucumber, carrot, radish, and herbs. Added cooked shrimps for protein, but you have an option to make it a vegan and gluten-free dish.

I’ll never get tired of eating noodles. I grew up eating a lot of rice and noodles. Every birthday, as a tradition, we cook noodles as symbol of long life. I like soba noodles because it hold its shape and it doesn’t break easily if done right. It’s a kind of noodles that must be cooked aldente or it’ll turn into a mush.

what is soba noodles?

Soba is a Japanese noodle made from buckwheat. It can be served hot or cold with a dipping sauce. It can also be served as soup. Add broth, some veggies, and any type of protein, then add the seasonings and you’ll have a warm and nice noodle soup.

how to cook soba noodles?

A package of soba noodles usually comes in 3 bundles. If I’m cooking for my husband and myself I  only use one bundle (enough for 2 people, about 4 ounces). I add the water in a pot the same why I do when I make my spaghetti. Then I add the noodles, let it boil, constantly stirring to prevent from sticking. I cook the noodles for about 5 minutes or aldente (don’t over cook or it’ll turn into a mush). Use a strainer, drain, and run over cold water to stop the cooking process. I add a little sesame oil to the noodles (about 1 teaspoon), then toss to coat. Set aside until I’m ready to add the sauce or add them to my soup.

Cold Sesame Soba Noodles

Ingredients
  

  • 1/4 cup light soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoon sesame oil
  • 2 tablespoons coconut palm sugar or brown sugar
  • 1/4 teaspoon red chili pepper flakes
  • 1 teaspoon grated ginger
  • 1 garlic clove, grated
  • 1 bundle or 4 oz. soba noodles
  • water for boiling the noodles
  • 1 small cucumber, thinly sliced (about 1/4 cup)
  • 1 small carrot, thinly sliced (about 1/4 cup)
  • 2 small radishes, thinly sliced
  • 4 oz. cooked shrimps, peeled
  • 1/4 cup fresh herbs, mint, and cilantro, roughly chopped
  • Option 1 fresh long red chili

Instructions
 

  • Make the sauce. In a saucepan add soy sauce, rice vinegar, sesame oil, coconut palm sugar or brown sugar, red chili pepper flakes, grated ginger, and grated garlic. Stir until the sugar dissolved, simmer for a minute or until the sauce thickened. Set aside.
  • Cook the soba noodles according to the package. Rinse with cold water to stop the cooking process. Drain and set aside.
  • In a serving bowl, add the noodles, cucumber, carrot, radishes, the cooked shrimps, herbs, and fresh red long chili pepper. Toss to coat well. Served cold.

Notes

  • For the sauce, if you like a peanut sauce, you can add 1 tablespoon peanut butter to the sauce and sprinkle chopped roasted peanuts before serving. 
  • If you can’t find fresh long red chili pepper, you can use bell pepper.
  • You can make soba noodle soup and add the shrimps and veggies.
