Coconut Mango Chia Pudding

Sometimes we just need something a little sweet to take care of our nagging sweet tooth. This Coconut Mango Pudding is the perfect fix for that. I love soaking chia seeds in a nut milk or coconut milk, it gives the chia seeds a creamy flavor and it feels like your eating tapioca but a lot healthier. Adding pure maple syrup makes it a little sweeter which will help in flavoring your pudding.

Ingredients
  

  • 3 tablespoons chia seeds
  • 1 cup canned coconut milk, full fat
  • 1 cup fresh mango chunks
  • 4 tablespoons pure maple syrup, divided
  • a dash of cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon sliced almonds
  • 1 kiwi, peeled and diced
  • 1 tablespoon unsweetened coconut flakes

Instructions
 

  • In an airtight container, combine chia seeds, coconut milk, cinnamon, vanilla,  and 2 tablespoons maple syrup, stir to mix well. Cover the container, store in the fridge overnight. 
  • When ready to assemble. Place 1/4 cup of chia seeds mixture in a glass, layer with mango and kiwi, drizzle with the remaining maple syrup. Repeat the process until you reach the top of the glass. Sprinkle with sliced almonds and unsweetened coconut flakes.
