In an airtight container, combine chia seeds, coconut milk, cinnamon, vanilla, and 2 tablespoons maple syrup, stir to mix well. Cover the container, store in the fridge overnight.
When ready to assemble. Place 1/4 cup of chia seeds mixture in a glass, layer with mango and kiwi, drizzle with the remaining maple syrup. Repeat the process until you reach the top of the glass. Sprinkle with sliced almonds and unsweetened coconut flakes.
