Coconut and Cranberry Bites
All I know is I love coconut no matter what others say! You probably know what American Heart Association report had advised about the use of coconut. Coconut contains saturated fat but it also contains 65% of medium chain triglycerides (MCT). It’s the kind of fat that rapidly absorbs into our bloodstream to burn as fuel for our body. I like the nutty taste of coconut, combine with sweet dried cranberries and almonds. These ingredients will fuel you to attain the energy you need for the day. Whether you’re looking for a quick breakfast or a post workout munchies…these energy bites are your healthy choice to tame your mid-morning cravings.

Ingredients
- 1 cup unsalted almonds
- 1 cup dates
- 1/2 cup dried cranberries, divided
- 1 tablespoon coconut oil, melted
- 1 tablespoon ground flax seeds
- 1 tablespoon chia seeds
- 1 scoop protein powder, optional
- 2 tablespoons unsweetened coconut flakes
Instructions
- In a food processor, add the almonds, process until finely chopped. Add the rest of the ingredients except 1/4 cup dried cranberries and coconut flakes. Process until it turns into sticky consistency to form into bites.
- Transfer to a bowl. Add the rest of the dried cranberries, stir to mix well. Form into a 1-inch ball, roll onto the unsweetened coconut flakes to coat.
