Cinnamon Pecan Rolls

Craving for cinnamon rolls? No need to go out of the house and stand in a long line for those overly sweet, commercialized, high-priced cinnamon rolls. You know what I’m talking about. Let’s make this simple Cinnamon Pecan Rolls with smooth and silky cream cheese frosting. Roll your sleeves, get your mixer, and apron on, let’s make this treat that makes life a little brighter. Then brew your coffee, have a cup, and relax.

FOR THE CINNAMON PECAN FILLING YOU NEED:

  • 1 cup pecans 1/2 cup brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons cinnamon
  • 1 teaspoon salt
  • 1/4 cup Butter

INSTRUCTIONS:

  • Roughly chop the pecans. Set aside. In a small bowl, combine brown sugar, granulated sugar, cinnamon, and salt, stir to combine. Set aside. Bring the butter to room temperature (you’ll brush the rolled dough with butter).

for the cream cheese frosting you need:

  • 8 oz. cream cheese softened
  • 1/4 cup butter softened
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream

INSTRUCTIONS:

  • In a bowl, cream the butter and sugar, then add the cream cheese and mix until well combined. Gradually add the heavy cream, mix until smooth and fluffy.

YOU NEED:

You can watch the instructional video on how to make Homemade Bread. I used this same dough to make the Cinnamon Pecan Rolls.  

  • 3 cups bread flour or all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 sachet or packet of instant dry yeast
  • 1 cup warm water (100ºF-105ºFº)
  • 3 tablespoons oil
  • 1 teaspoon salt

INSTRUCTIONS:

  1. Make the sponge (aka preferment). In a mixing bowl, combine 1 cup flour, sugar, and water. Mix until well incorporated, cover the bowl with plastic wrap, then lay a kitchen towel over the bowl. Place in a warm area of the house, rest for 1 hour or until foamy. 
  2. When the sponge is ready, attach the hook attachment of the mixer, gradually add the remaining flour, oil, and salt. Mix in medium-low until well combined. Increase the speed to medium-high, mix for 2 minutes or until the dough comes together. 
  3. Pull the dough off the hook attachment and pull it out of the bowl. Lightly dust a surface with flour, knead the dough for 5 minutes or until smooth. 
  4. Now you’re ready to roll and make your Cinnamon Pecan Rolls (see recipe below).

Homemade Cinnamon Pecan Rolls

  • 8×8 square baking pan or dish

Ingredients
  

  • 1 batch of the Homemade Bread dough, see instructions above
  • 1/4 cup butter, softened
  • 1 cup pecans, rough chopped
  • 1/2 cup brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons cinnamon
  • 1/2 teaspoon salt

FOR THE CREAM CHEESE FROSTING

  • 8 oz. cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream

Instructions
 

  • Preheat the oven to 375ºF. Grease an 8×8 square pan or dish.
  • Lightly dust the surface with flour, roll the dough into 12"-14" diameter.
  • Brush the dough with butter. Evenly spread the cinnamon, and sprinkle the pecans.
  • Carefully roll the dough from one end to another end, then form a log.
  • Use a bench scraper or a knife, equally divide the rolls into 10 pieces. Place them into a prepared pan. Cover with plastic wrap, then lay a kitchen towel over. Place the rolls in a warm area of your house and rest for an hour or until they double in size.
  • When the cinnamon rolls are ready, place them in an oven and bake for 20-25 minutes. Cool.
  • Meantime, make the cream cheese frosting. In a bowl, place the cream cheese and butter. Mix until well combined. Add the sugar and mix at low speed until incorporated.
  • Increase the speed of your mixer to medium-high. Gradually add the cream, continue mixing until smooth. Scrape the sides of the bowl to get all ingredients incorporated.
  • When the cinnamon rolls completely cooled, spread the cream cheese frosting on top. Enjoy!

Notes

  • Save the leftover cream cheese, you can use it as spread to any of your baked goods. 
  • Another way of proofing the dough is to place them in an oven with the lights on (no heat). Then fill a bowl with hot water and place it at the bottom of the oven. The steam will keep it warm so the dough can nicely rise.
