Chicken Waldorf

Lunch is ready! This Chicken Waldorf is a one-bowl salad for quick lunch or dinner. I call it “one-bowl salad” because it’s literally combining all ingredients in one bowl. Tips

  • To make it easier, buy rotisserie chicken with very minimal seasonings to make sure your Waldorf salad flavoring stands out and not the heavy seasoned cooked chicken. 
  • Or you can buy two chicken breasts and poach them, then shred or cut them into bite-sized pieces.
  • Make sure to squeeze the lemon juice into the cubed apples to avoid browning. 
  • You can also use pecans instead of walnuts.
  • Adding a teaspoon of sugar balances the flavor of this salad. You can also use a tablespoon of maple syrup if you don’t want to use granulated sugar.

Chicken Waldorf Salad

Quick, creamy chicken salad with a touch of sweetness from fresh grapes and apples.

  • Mixing bowl

Ingredients
  

  • 2 cups cooked chicken, shredded
  • 1 cup mayonnaise
  • 1 apple, cubed
  • 1 cup grapes, halved
  • 2 stalks celery, chopped
  • 1 cup walnuts, roughly chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • salt and ground pepper to taste

Instructions
 

  • In a mixing bowl, combine all ingredients, stir until well combined.
  • Plate the salad, lay a couple of romaine lettuce on a plate, scoop about a cup of the chicken salad on a bed of lettuce.
  • Serve with bread slices or mixed greens.
