Chicken Waldorf Salad

Quick, creamy chicken salad with a touch of sweetness from fresh grapes and apples.

Ingredients
  

  • 2 cups cooked chicken, shredded
  • 1 cup mayonnaise
  • 1 apple, cubed
  • 1 cup grapes, halved
  • 2 stalks celery, chopped
  • 1 cup walnuts, roughly chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • salt and ground pepper to taste

Instructions
 

  • In a mixing bowl, combine all ingredients, stir until well combined.
  • Plate the salad, lay a couple of romaine lettuce on a plate, scoop about a cup of the chicken salad on a bed of lettuce.
  • Serve with bread slices or mixed greens.
