Ingredients
  

  • 1 whole rotisserie chicken, skin removed
  • 1 cup mayonnaise
  • 1 cup Colby Jack cheese, shredded
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Sriracha
  • 1 small red onion, finely chopped
  • pinch of salt to taste

Instructions
 

  • Remove the skin from the rotisserie chicken, place it in a bowl, then pull the meat and shred.
  • Add mayo, cheeses, Dijon mustard, red onion, Sriracha, and season with salt to taste.
  • Mix the chicken mixture to combine. Option: toast two slices of bread, spread the chicken salad, and top with shredded Romaine lettuce. Serve with pickles or a piece of fruit.
