Chicken Salad

Great for making Chicken Salad sandwich or just feeling to have something to snack on.

- 1 whole rotisserie chicken, skin removed
- 1 cup mayonnaise
- 1 cup Colby Jack cheese, shredded
- 3 tablespoons grated Parmesan cheese
- 2 tablespoons Dijon mustard
- 2 tablespoons Sriracha
- 1 small red onion, finely chopped
- pinch of salt to taste
Remove the skin from the rotisserie chicken, place it in a bowl, then pull the meat and shred.
Add mayo, cheeses, Dijon mustard, red onion, Sriracha, and season with salt to taste.
Mix the chicken mixture to combine. Option: toast two slices of bread, spread the chicken salad, and top with shredded Romaine lettuce. Serve with pickles or a piece of fruit.
