Chicken Salad

The other day I made a noodle dish for my husband’s work and I overestimated the chicken I needed for the dish. So today I decided I’ll make the chicken salad with the leftover shredded chicken breast. Trader Joe’s is one of my favorite stores, I love their Organic Mayo and that’s what I used for this recipe. I know, I know, for others – they’re probably thinking – Oh no that’s not healthy. But if you looked at the vegan mayo, you’ll be surprised what they have in it. This particular Trader Joe’s mayo is made from ingredients I can read and pronounce – so it’s pretty good for me.
Recipe

Ingredients
- 1 pound cooked and shredded chicken breast
- 1/2 cup Trader Joe's Organic Mayo
- 1/2 cup red grapes, halved
- 1 small red onion, finely chopped
- 1 stalk celery, finely chopped
- salt and pepper, to taste
Instructions
- In a bowl combine all ingredients, stir to mix well. Serve over mixed greens and with some avocados.
