Chicken Nachos Cheese
Try to relax and have something delicious while sipping your refreshing iced tea. Or better yet a nice cold glass of margarita. In this recipe I used my homemade taco mixed, no added salt so you can control how much salt you need for your dish. I also used the same recipe to make my Chicken Quesadillas – talking about “killing 2 birds with one stone”. Very little effort and you’ll have 2 nice dishes that are delicious and satisfying.
Ingredients
1 lb. cooked shredded chicken, either chicken breast or dark chicken meat
1 bell pepper, deseed and cut into small diced
1 cup pepper jack cheese, shredded
1 cup Colby Jack cheese, shredded
1/2 cup fresh Parmesan cheese
2 stalks green onions, trimmed and sliced
3 garlic cloves, minced
1 onion, chopped
2 tablespoons olive oil
2 teaspoons homemade taco mixed
1 package tortilla chips
Taco Mixed
4 tablespoons chili powder
2 teaspoons cumin
2 teaspoons onion powder
2 teaspoons oregano
2 teaspoons garlic powder
3 teaspoons paprika
-Store your taco mixed with your other spices in an airtight container or use a mason jar. You only need 2 teaspoons of the mixed for this recipe.
Instructions
-1. Heat the pan with oil. Sauté garlic and onion for a minute or until the onion is tender. Add the bell pepper, stir, cook until tender.
-2. Season with salt and pepper (or use chili pepper flakes). Add the taco mixed, stir to combine well. Add the cooked chicken, constantly stirring until well heated and everything’s combined. Remove from the heat and cool.
-3. Assemble the nachos. In a skillet or heat proof dish, lay and spread the nacho chips. Fill with the chicken mixture. Add the cheeses, and sprinkle with green onions. Repeat the process to have 2 layers of nacho cheese.
-4. Place your assembled Chicken Nachos Cheese in a pre-heated toaster oven for 2 minutes or until the cheeses are melted. You can also use your oven but make sure to – preheat to 400 degrees F. and bake for 2-4 minutes or until the cheeses are melted.
-5. Remove from the oven, serve hot.
