Chewy Peanut Butter Chocolate Chip Cookies

It’s a sunny day and a perfect day to make these chewy-melt in your mouth cookies. My kids are older now but they still crave for special treats from time to time. I can smell a hint of cinnamon with the perfect combo of peanut butter and chocolate. When I bake something delicious like these cookies, it’s very reminiscent of their childhood. It also reminds me of the kids coming home from school and the first thing they grab is a jar full of “ooey gooey” cookies. 

how to make “Ooey Goey” peanut butter chocolate chip cookies

YOU NEED:

1 cup butter (2 sticks), softened to room temperature

3/4 cup light or dark brown sugar

1/4 cup granulated sugar

1 egg

1/4 cup creamy peanut butter

2 teaspoons vanilla

2 1/4 cups all-purpose flour

2 teaspoons cinnamon

1 teaspoon baking soda

1 teaspoon salt

1 cup semi-sweet chocolate chips or morsels 

step-by-step

  • Preheat the oven to 350ºF. Line a baking sheet pan with parchment paper.
  • Cream the butter and sugar.
  • Add the egg, mix until well incorporated.
  • Add the peanut butter and vanilla, continue mixing until combined.
  • In a bowl, add flour, cinnamon, baking soda, and salt.
  • Use a whisk and mix everything.
  • Gradually add the dry ingredients to the peanut butter mixture.
  • Fold in the chocolate chips.
  • Use a small cookie scoop.
  • Scoop the dough onto a prepared pan.
  • Space the dough apart, the dough expand when baked.

Ingredients
  

  • 1 cup butter (2 sticks), softened to room-temperature
  • 3/4 cup light or dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/4 cup creamy peanut butter
  • 2 teaspoons vanilla
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips or morsels

Instructions
 

  • Preheat the oven to 350ºF. Line a baking sheet pan with parchment paper
  • In a bowl, add the butter and sugar. Mix until fluffy.
  • Add the egg, continue mixing until light in color
  • Add peanut butter and vanilla. Continue mixing until all incorporated. Set aside.
  • In another bowl, add flour, cinnamon, baking soda, and salt. Use a whisk and mix until well combined and no lumps of flour.
  • Gradually add the flour mixture to the peanut butter mixture, either use a spatula to fold in the flour or set the mixer on low and continue mixing until all incorporated. Do not over mix.
  • Fold in the chocolate chips, mix until well combined.
  • Use a small cookie scoop. Scoop the dough onto the prepared pan. Bake for 15-20 minutes or until golden brown.

Notes

  • Do not overmix the dough. A little bit of flour on the surface of the dough is ok, just use a spatula to mix well. 
  • If you want to add oats and make it Peanut Butter Oat Cookies, just add 1/2-1 cup of old fashioned oats
