Chewy Peanut Butter Chocolate Chip Cookies

Equipment

  • Stand mixer with a paddle attachment. Or a handheld mixer
  • Spatula
  • Mixing bowls
  • Measuring cups
  • Measuring spoons

  • Small cookie scoop

Ingredients
  

  • 1 cup butter (2 sticks), softened to room-temperature
  • 3/4 cup light or dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/4 cup creamy peanut butter
  • 2 teaspoons vanilla
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips or morsels

Instructions
 

  • Preheat the oven to 350ºF. Line a baking sheet pan with parchment paper
  • In a bowl, add the butter and sugar. Mix until fluffy.
  • Add the egg, continue mixing until light in color
  • Add peanut butter and vanilla. Continue mixing until all incorporated. Set aside.
  • In another bowl, add flour, cinnamon, baking soda, and salt. Use a whisk and mix until well combined and no lumps of flour.
  • Gradually add the flour mixture to the peanut butter mixture, either use a spatula to fold in the flour or set the mixer on low and continue mixing until all incorporated. Do not over mix.
  • Fold in the chocolate chips, mix until well combined.
  • Use a small cookie scoop. Scoop the dough onto the prepared pan. Bake for 15-20 minutes or until golden brown.

Notes

  • Do not overmix the dough. A little bit of flour on the surface of the dough is ok, just use a spatula to mix well. 
  • If you want to add oats and make it Peanut Butter Oat Cookies, just add 1/2-1 cup of old fashioned oats
