Chewy Peanut Butter Chocolate Chip Cookies

- 1 cup butter (2 sticks), softened to room-temperature
- 3/4 cup light or dark brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/4 cup creamy peanut butter
- 2 teaspoons vanilla
- 2 1/4 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips or morsels
Preheat the oven to 350ºF. Line a baking sheet pan with parchment paper
In a bowl, add the butter and sugar. Mix until fluffy.
Add the egg, continue mixing until light in color
Add peanut butter and vanilla. Continue mixing until all incorporated. Set aside.
In another bowl, add flour, cinnamon, baking soda, and salt. Use a whisk and mix until well combined and no lumps of flour.
Gradually add the flour mixture to the peanut butter mixture, either use a spatula to fold in the flour or set the mixer on low and continue mixing until all incorporated. Do not over mix.
Fold in the chocolate chips, mix until well combined.
Use a small cookie scoop. Scoop the dough onto the prepared pan. Bake for 15-20 minutes or until golden brown.
- Do not overmix the dough. A little bit of flour on the surface of the dough is ok, just use a spatula to mix well.
- If you want to add oats and make it Peanut Butter Oat Cookies, just add 1/2-1 cup of old fashioned oats
