Cauliflower Tempura with Fig Sweet and Sour Sauce

This sauce is smooth and flavorful. You can buy fig preserve or jam at any grocery store, you can also use apple cider vinegar instead of white vinegar.

Ingredients

1 head cauliflower, cut into florets

1 cup flour

1 cup water

2 egg whites

vegetable oil for frying

ice cubes

For the sauce

2 tablespoons fig jam/spread

2 tablespoons honey

2 tablespoons tomato paste

2 tablespoons white vinegar

1 tablespoon brown sugar

2 teaspoons Worcestershire sauce

1/4 cup soy sauce

In a bowl, add all sauce ingredients, and use a whisk to combine. Transfer to a saucepan, and heat until it simmer for about 2-3 minutes or until reduced and thickened to the consistency you’d like.

For the cauliflower tempura

-1. Shift the flour to make sure there are no lumps.

-2. In a bowl combine egg whites, water, and ice cubes.

-3. Use a whisk and mix all wet ingredients. Add the flour to the wet ingredients and whisk until it becomes smooth.

-4. Heat a pan with oil, dip the cauliflower into the batter, fry until slightly golden. Drizzle the sauce on top or dip the cauliflower tempura into the sauce.
