Caprese Salad

Not so typical Caprese Salad but close. I used “Zima” orange grape tomatoes and I added cilantro for my dressing. I also added some red onions – so, now you can see how this recipe is “not” so typical Caprese salad. But don’t worry you’ll still get your favorite cheese (mozzarella) and balsamic vinegar. I love the sweet orange grape tomatoes. That day I was in the store they were sampling these tomatoes, they’re so sweet and I love small tomatoes a bit better than normal size. Cilantro? Whaaaat? Yup, I combined cilantro and basil to create a more savory herby taste. Let’s get cooking so you’ll know exactly what I’m talking about “or writing about” 🙂

Recipe

Ingredients
  

  • 1 cup orange sweet grape tomatoes, halved
  • 1 cup bite-size mozzarella cheese, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup cilantro
  • 1/2 cup fresh basil
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove
  • 2 tablespoons olive oil
  • sea salt and pepper to taste

Instructions
 

  • FOR THE DRESSING: 
    In a food processor, add garlic, cilantro, basil, balsamic vinegar, salt, and pepper. Process until finely chopped. Turn the food processor to low speed, pour the oil slowly into the feed hole and process until smooth. 
  • FOR THE SALAD: 
    In a bowl, combine tomatoes, red onion, and mozzarella cheese. Pour the dressing, stir and toss to coat. Add more salt if needed, garnish with some herbs.
