Apple Pie Bread
I love Fall Season! This is the time when your house starts smelling like grandma’s kitchen. I remember as a child, my grandma used to bake all kinds of delicious treats. One of my favorite is apple pie. Today I decided to give it a little twist, I made this Apple Pie Bread using oats, banana, eggs, pecans, spices, and of course the apples. It’s a bit healthier and so delicious.
HERE ARE THE INGREDIENTS:
1 cup old-fashioned oats
1 banana
3 eggs
4 oz. unsweetened apple sauce
2 tablespoon brown sugar, plus 2 tablespoons for topping
1/4 cup maple syrup
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 apples, peeled, cored, cubed
2 tablespoons pecans, chopped
STEP-BY-STEP
- Preheat the oven to 350ºF. Grease a mini loaf pan tin or one regular loaf pan. In a food processor, add the oats, pulse for a minute or until fine texture like a flour.
- Add the banana, eggs, apple sauce, brown sugar, baking powder, cinnamon, nutmeg, and salt.
- Run the food processor until everything’s well blended or smooth.
- Pour the batter into a bowl.
- Then fold in the apple into the batter.
- Scoop the batter into each mini loaf pan, about 3/4 full.
- Top with chopped pecans and reserved brown sugar.
- Bake for 30 minutes or until the toothpick inserted come our clean. It might take longer time to bake if you’re using a regular loaf pan.
- Cool for at least 15 minutes before serving. Enjoy!
