  • Food processor or blender
  • Mini loaf tin pan or regular loaf pan
  • Mixing bowl
  • cutting board
  • knife
  • Measuring spoons
  • Measuring cups
  • Spatula

Ingredients

  • 1 cup old-fashioned oats,
  • 1 banana
  • 3 eggs
  • 4 oz. unsweetened applesauce
  • 2 tablespoons brown sugar, plus 2 tablespoons for topping
  • 1/4 cup pure maple syrup
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon, plus 1 teaspoon for topping
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon of salt
  • 2 apples peeled, cored, cubed
  • 2 tablespoons chopped pecans

Instructions

  • Preheat the oven to 375ºF. Grease a mini loaf tin pan or a regular loaf pan
  • In a food processor, add the oats, pulse for a minute or until fine in texture like flour. Add banana, eggs, apple sauce, brown sugar, maple syrup, baking powder, cinnamon, nutmeg, and salt. Blend until smooth. Pour the batter into a mixing bowl. Fold in the apples. Scoop the batter into each mini loaf tin, about 3/4 full. Top with pecans, reserved brown sugar, and cinnamon.
  • Bake for 30 minutes or until the toothpick inserted comes out clean. It might take an extra 2-3 minutes of baking if you're using a regular loaf pan. Cool in a cooling rack for at least 15 minutes before serving.
