Apple Pecan Oatmeal Cookies

It’s that time! Making cookies is a holiday tradition. Today we’re making Apple Pecan Oatmeal Cookies, so moist, chewy, and delicious. I used semi-sweet chocolate chips but white chocolate is great to use for this recipe also.

If you don’t have a standing mixer, use a handheld mixer to cream the butter and sugar, then add the eggs. When you’re ready to mix the rest of the ingredients, you can just use the spatula or use your hands to mix the cookie dough until well incorporated.

Yield: 2 dozen cookies

Ingredients
  

  • 2 apples, peeled, diced
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 3 cups uncooked oats
  • 1 cup chopped pecans
  • 1 cup semi-sweet or white chocolate
  • 1 cup dried cranberries
  • pinch of salt

Instructions
 

  • Preheat the oven to 350ºF. Line baking sheet pans with parchment paper.
  • In a bowl, combine butter and sugar, mix until fluffy and light in color. Add the eggs one at a time mix until all incorporated. Add vanilla, continue mixing until well combined.
  • In another bowl, combine flour, cinnamon, baking soda, and a pinch of salt. Use a whisk and mix to combine.
  • Add the dry ingredients to the butter and egg mixture, a little at a time, mix until well incorporated. Add the rest of the ingredients, use a spatula, or if you're using a standing mixer, mix until everything is well combined.
  • Use a cookie or medium-size ice cream scoop. Place the cookie dough onto a prepared baking pan, and flatten them. Bake for 10-12 minutes.
