Apple Pecan Oatmeal Cookies

- 2 apples, peeled, diced
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 3 cups uncooked oats
- 1 cup chopped pecans
- 1 cup semi-sweet or white chocolate
- 1 cup dried cranberries
- pinch of salt
Preheat the oven to 350ºF. Line baking sheet pans with parchment paper.
In a bowl, combine butter and sugar, mix until fluffy and light in color. Add the eggs one at a time mix until all incorporated. Add vanilla, continue mixing until well combined.
In another bowl, combine flour, cinnamon, baking soda, and a pinch of salt. Use a whisk and mix to combine.
Add the dry ingredients to the butter and egg mixture, a little at a time, mix until well incorporated. Add the rest of the ingredients, use a spatula, or if you're using a standing mixer, mix until everything is well combined.
Use a cookie or medium-size ice cream scoop. Place the cookie dough onto a prepared baking pan, and flatten them. Bake for 10-12 minutes.
