Apple Galette
We’ve never missed going for apple picking every year. This apple orchard we go to is so amazing. It’s a huge farm lots of different apples and pumpkin too because it’s Fall season. There are activities for kids, delicious canned or bottled goods, and beautifully bloomed mums. It was a bit rainy when we went but I still love the fresh air and the scenery. Ingredients:
FOR THE CRUST:
1 1/2 all purpose flour
1 tablespoon granulated sugar
1 stick of butter, cold, cut into cubes
3 teaspoons apple cider vinegar
3-4 tablespoon ice water
FOR THE FILLING
4 medium size apples, peeled, sliced in wedges
1/4 cup brown sugar
1 tablespoon cinnamon
1 tablespoon butter
Instructions:
1. Combine ice water and apple cider vinegar. In a food processor, combine flour, butter, sugar, and salt, pulse for a minute. Then run the food processor and while the machine is running slowly pour the water and apple cider mixture into the mouth feed, one tablespoon at a time. The dough will start to come together but still crumbly.
2. Transfer the dough into a bowl. Work the dough until it comes together and forms a ball. Flour the surface and start kneading the dough until smooth, then flatten it. Wrap it in a plastic wrap for at least 2 hours or overnight.
3. Line a baking sheet pan with parchment paper. For the filling, combine brown sugar, 1 tablespoon butter, and cinnamon. Mix in the apples and toss until well coated. Set aside.
4. Preheat the oven to 375ºF. Remove the chilled dough from the fridge, roll it in about 12″ diameter (the dough will get softer as you work it). Transfer into a prepared baking sheet pan.
5. Lay the apples in the middle of the rolled dough and form a centric pattern. Fold the sides, sometimes it tears apart, and when that happens, pinch until it comes together. Brush with egg wash, bake for 20-30 minutes, or until it turns golden brown.
