Stir Fry Noodles
Hi there! I love this noodle dish. My grandma used to cook it for me all the time when I was a little girl, we called it “Pansit” (pronounce as pun-sit). Very easy, simple, but full of flavors.
You can use any vegetables you like, but always use onions, celery and carrots because they add the most flavor to this dish. I also used “21 Seasoning Salute” my favorite combination of spices. There are actually 21 individual seasoning in the mix. It’s a smooth blend of onion, black pepper, celery seed, cayenne pepper, parsley, basil marjoram, bay leaf, oregano, thyme, savory, rosemary, cumin, mustard, coriander, garlic, carrot, orange peel, tomato, lemon juice and lemon oil. It doesn’t contain salt that’s why it’s so versatile. Shake before using, add it to your soup, stir fry, or even homemade vinaigrettes

Ingredients
8 oz. rice stick noodles
1 cup shredded rotisserie chicken
1 lb. shrimps, peeled and deveined
3 stalks celery, sliced
2 stalks green onions, sliced
1 cup green beans, thinly sliced
1 cup shredded broccoli stalk or broccoli florets
1 medium carrot, shredded
1 yellow onion, chopped
4 garlic cloves, minced
1 cup chicken stock
3 tablespoons olive oil
2 teaspoons 21 seasoning salute
1/2 teaspoon dried thyme
1 teaspoon turmeric
a handful of cilantro, chopped, for garnish
salt and pepper to taste
For the sauce
1/4 cup soy sauce
1 tablespoon rice vinegar
2 teaspoons honey
Combine all sauce ingredients. Whisk until mix well. Set aside.
Instructions
1. Soak the noodles into warm water for 10-15 minutes or until softened. Drain after soaking. Use a kitchen scissors and cut into shorter strand noodles. Set aside.
2. Heat a wide pan with olive oil. Sauté garlic and onion until the onion is tender or translucent, season with a little bit of salt and pepper. Add the rest of spices – 21 seasoning salute, dried thyme, and turmeric, stir to combine.
3. Add the shrimps and chicken, constantly stirring until the shrimps turn pink or opaque, add the veggies, stir to combine. Add chicken stock and sauce, make sure to stir the sauce before adding to the pan.
4. Add the noodles, constantly stirring until everything are combined well. Garnish with green onions and cilantro.
