Blackened Shrimps
The seared shrimps are perfect with corn salsa and a little bit of steamed rice on the side.
Ingredients:
1 1/2 lb. shrimps, peeled and deveined
3 tablespoons oil
1 tablespoon chili powder
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon dried thyme
Juice of one lime
Salt and pepper to taste
Instructions:
-In a bowl combine chili powder, cumin, oregano, thyme, and garlic powder. Add the shrimps, toss to coat well. Set aside and marinate for 30 minutes.
-Heat a pan with oil, cook the shrimps for 30 seconds each side or until they curl and cooked through.
-Remove from the heat, squeeze lime, and stir until well combined. Serwith corn salsa and steamed rice.
Recipe for the Corn Salsa:
Ingredients:
2 cups frozen corn kernel
1 roma tomato, diced
1 jalapeño pepper, remove the seeds for mild taste
1 shallot, small diced
a handful cilantro, finely chopped
juice of one lime
salt to taste
Combine all ingredients, toss to coat well.
