Soba Noodles with Lemon Garlic Shrimps

A quick and refreshing noodle salad. And you can also use chicken in this recipe instead of shrimps.

Ingredients:

6 oz. uncooked soba noodles or half the package

1 lb. shrimps, peeled and deveined

1 teaspoon garlic powder

3 tablespoons olive oil

1 teaspoon lemon zest

1 teaspoon sesame seeds

juice to one lemon

Salt and pepper to tast

For the Salad:

1 cup shredded green cabbage

1 cup shredded red cabbage

1 cup shredded carrots

2 stalks green onions, sliced

4 small red radish, sliced thinly

a handful cilantro

a handful mint

Recipe for the sauce:

1 garlic clove, finely minced

1 inch size ginger, finely minced

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/4 teaspoon red chili pepper flakes (less if you want mild taste)

How to cook soba noodles:

  1. Fill your pot halfway with water and let it boil or use a pasta pot.
  2. When boiling add the noodles. Stir constantly to prevent from sticking.
  3. Cook the noodles for 2-3 minutes or al dente. Do not over cooked.
  4. Once softened, removed from the heat and run with cold water.
  5. Transfer to a bowl, add a teaspoon or more oil if starts sticking.
  6. Set aside and make your sauce.

Shrimps:

Instructions:

  1. In a bowl marinate the shrimps in lemon juice, garlic powder, and lemon zest. Set aside for at least 15 minutes
  2. Heat a pan with oil. Fry the shrimps for 20 seconds each side or until opaque and they starts curling.
  3. Remove the shrimps from the heat, and set aside.
  4. In a bowl, combine soba noodles and 1/2 of the sauce. Toss until well coated.
  5. Add the vegetables and the rest of the sauce and toss. Add salt and pepper to taste.
  6. Add the shrimps and sprinkle sesame seeds.
