Stir Fry Veggies with Spicy Peanut Sauce
One of my favorites is peanut sauce, but in this recipe – you can substitute it with almond butter. Snow peas are perfect for stir-frying, they’re crunchy and a little sweet in flavor. I added radishes and cucumber to the veggies to make it refreshing and also to add more crunch.

Ingredients
- 2 cups snow peas, trim the ends
- 1 cup cooked quinoa or brown rice
- 1 cup mushrooms, sliced
- 1 small cucumber, julienned
- 2 radishes, julienned
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions
- Heat a pan with oil, add snow peas and mushrooms. Frequently stir and cook until tender. Set aside.
- Add the cucumber and radishes to the snow peas and mushroom stir-fry. Prepare the sauce.
- For the sauce: combine all ingredients in a bowl, use a whisk and stir until well combined.
- Place the quinoa on a plate. Top with the veggies and drizzle the sauce on top.
Note:
You can stir fry any veggies you like.
