Ingredients
  

  • 2 cups snow peas, trim the ends
  • 1 cup cooked quinoa or brown rice
  • 1 cup mushrooms, sliced
  • 1 small cucumber, julienned
  • 2 radishes, julienned
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions
 

  • Heat a pan with oil, add snow peas and mushrooms. Frequently stir and cook until tender. Set aside.
  • Add the cucumber and radishes to the snow peas and mushroom stir-fry. Prepare the sauce.
  • For the sauce: combine all ingredients in a bowl, use a whisk and stir until well combined.
  • Place the quinoa on a plate. Top with the veggies and drizzle the sauce on top.
