Heat a pan with oil, add snow peas and mushrooms. Frequently stir and cook until tender. Set aside.
Add the cucumber and radishes to the snow peas and mushroom stir-fry. Prepare the sauce.
For the sauce: combine all ingredients in a bowl, use a whisk and stir until well combined.
Place the quinoa on a plate. Top with the veggies and drizzle the sauce on top.
