Zoodle in a Jar
Ohhh this one is super good! I can’t help but share this recipe from Simple Green Smoothies – I need this kind of recipes for sure. I’ve been on a constant roller coaster dieting, it was so frustrating. What I discovered was – I was not enjoying the simple foods that help the body thrive because it was not prepared that makes the palate do the happy dance haha! Eating healthy doesn’t have to be complicated – it’s not about just eating carrots and celery all day long. It’s about eating whole foods that are full of flavors and satisfying.

RECIPE ADAPTED FROM SIMPLE GREEN SMOOTHIES
Ingredients
- 1 zucchini, spiralized, or peeled into thin strips
- 1/2 cup kale cut into thin ribbons
- 1/4 cup carrots, shredded
- 2 tablespoons green onions, thinly sliced
- 1/2 teaspoon fresh ginger grated
- 1 garlic clove, minced
- 1 teaspoon sesame oil
- 1 1/2 cup vegetable broth, divided
- 1 teaspoon tamari
- 2 tablespoons sunflower seeds
- 2 tablespoons pepitas
- salt and pepper to taste
- pinch red pepper flakes
Instructions
- Place the zucchini, kale, carrots, green onions, ginger, garlic, and sesame oil in the mason jar.
- Heat 1 1/2 cups vegetable broth and add 1 teaspoon tamari.
- Pour over the veggies in the jar. Let stand for 5 minutes
- Sprinkle with the pepitas, sunflower seeds, and a pinch of red pepper flakes.
