Ingredients
  

  • 1 zucchini, spiralized, or peeled into thin strips
  • 1/2 cup kale cut into thin ribbons
  • 1/4 cup carrots, shredded
  • 2 tablespoons green onions, thinly sliced
  • 1/2 teaspoon fresh ginger grated
  • 1 garlic clove, minced
  • 1 teaspoon sesame oil
  • 1 1/2 cup vegetable broth, divided
  • 1 teaspoon tamari
  • 2 tablespoons sunflower seeds
  • 2 tablespoons pepitas
  • salt and pepper to taste
  • pinch red pepper flakes

Instructions
 

  • Place the zucchini, kale, carrots, green onions, ginger, garlic, and sesame oil in the mason jar. 
  • Heat 1 1/2 cups vegetable broth and add 1 teaspoon tamari.
  • Pour over the veggies in the jar. Let stand for 5 minutes
  • Sprinkle with the pepitas, sunflower seeds, and a pinch of red pepper flakes.
