- YELLOW SPLIT PEA – has the same nutritional value as green peas. They also cook the same time. However, the yellow split pea has more of the earthy flavor and the green pea is sweeter. It’s also called soup pea, dry pea, or Matar Dal. It belongs to the family of sno-pea and sugar snap pea.
- SHREDDED COOKED CHICKEN – is the best way to add more protein to this soup. You can use rotisserie chicken, or buy 2 medium size chicken breast and cook through.
- DRIED HERBS – tarragon, smoked paprika, thyme, and garlic powder
- AROMATICS AND VEGGIES – onion, garlic, tomatoes, carrot, celery, and potatoes.

Ingredients
- 3 tablespoons olive oil
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 2 Roma tomatoes, deseed, diced
- 1 carrot, peeled and diced
- 2 stalks celery, diced
- 1 teaspoon tarragon
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 tablespons soy sauce
- 1 cup yellow split pea, rinsed and drained
- 2 cups shredded rotisserie chicken
- 2 cups chicken broth, divided
- 2 medium sized yellow potatoes, cubed or bite sized pieces
Instructions
- Heat a stockpot with oil. Add the onion and garlic, saute until the onion is tender. Add the tomatoes, carrot, and celery, stir to combine.
- Season with tarragon, thyme, smoked paprika, garlic powder, salt, and soy sauce. Stir to combine, add the yellow split pea and chicken, stir. Add 2 cups of chicken broth, stir to combine, cover, lower the heat, simmer for 20 minutes or until the yellow split pea are tender.
- Remove the cover, add the potatoes and the rest of the chicken broth. Cover, simmer for 20-30 minutes or until the potatoes are tender.
