Yellow Split Pea and Chicken Soup

Ingredients
  

  • 3 tablespoons olive oil
  • 1 yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 Roma tomatoes, deseed, diced
  • 1 carrot, peeled and diced
  • 2 stalks celery, diced
  • 1 teaspoon tarragon
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 tablespons soy sauce
  • 1 cup yellow split pea, rinsed and drained
  • 2 cups shredded rotisserie chicken
  • 2 cups chicken broth, divided
  • 2 medium sized yellow potatoes, cubed or bite sized pieces

Instructions
 

  • Heat a stockpot with oil. Add the onion and garlic, saute until the onion is tender. Add the tomatoes, carrot, and celery, stir to combine.
  • Season with tarragon, thyme, smoked paprika, garlic powder, salt, and soy sauce. Stir to combine, add the yellow split pea and chicken, stir. Add 2 cups of chicken broth, stir to combine, cover, lower the heat, simmer for 20 minutes or until the yellow split pea are tender.
  • Remove the cover, add the potatoes and the rest of the chicken broth. Cover, simmer for 20-30 minutes or until the potatoes are tender.
