Kale Kielbasa Soup

As the weather changes, let’s celebrate the season with this hearty soup that will satisfy our hunger. The smokiness of kielbasa complements the kale and potatoes so well. The mixture of onion, garlic, celery, and carrots is the “mirepoix” which are considered to be the key ingredients for adding oomph to the dish. This dish is bursting with wonderful flavors that are very warm during gloomy and cold days.

It’s really easy to tear the kale leaves off the stem

It’s really easy to tear the kale leaves off the stems. Don’t need to use a knife, unless you want to shred them. Otherwise, just use your hands and pull the leaves off the stems.

Kale Kielbasa Soup

Ingredients
  

  • 1 bunch kale, stem removed, roughly chopped
  • 14 oz. kielbasa, halved lengthwise, sliced
  • 3 red potatoes, peeled, cut into cubes
  • 1 yellow onion, chopped
  • 2 medium carrots, peeled, diced
  • 3 garlic cloves, minced
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 teaspoon 21 seasoning salute
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • salt and pepper to taste

Instructions
 

  • Heat a soup pot with oil. Add the onion, saute until soft or translucent. Add the garlic, stir and saute for a minute. Add the potatoes, saute for 2 minutes or until halfway cooked.
  • Add carrots, celery, smoked paprika, 21 seasoning salute, thyme, season with salt and pepper, stir to combine. Add the sliced kielbasa, stir to combine. Add the chicken broth, stir, cover, simmer for 2 minutes or until the veggies are tender.
  • Add the kale, cover, simmer for a minute or until wilted . this point, check if you need to add more seasonings like salt, pepper, or more smoked paprika and thyme. Serve immediately.

Notes

I use red chili pepper flakes for more heat, but you can just use regular black ground pepper.
