Kale Kielbasa Soup

Very hearty and warming soup for this chilly weather

Ingredients
  

  • 1 bunch kale, stem removed, roughly chopped
  • 14 oz. kielbasa, halved lengthwise, sliced
  • 3 red potatoes, peeled, cut into cubes
  • 1 yellow onion, chopped
  • 2 medium carrots, peeled, diced
  • 3 garlic cloves, minced
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 teaspoon 21 seasoning salute
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • salt and pepper to taste

Instructions
 

  • Heat a soup pot with oil. Add the onion, saute until soft or translucent. Add the garlic, stir and saute for a minute. Add the potatoes, saute for 2 minutes or until halfway cooked.
  • Add carrots, celery, smoked paprika, 21 seasoning salute, thyme, season with salt and pepper, stir to combine. Add the sliced kielbasa, stir to combine. Add the chicken broth, stir, cover, simmer for 2 minutes or until the veggies are tender.
  • Add the kale, cover, simmer for a minute or until wilted . this point, check if you need to add more seasonings like salt, pepper, or more smoked paprika and thyme. Serve immediately.

Notes

I use red chili pepper flakes for more heat, but you can just use regular black ground pepper.
