Zucchini Potato Italian Sausage Soup
I used mild Italian sausage but you can use the spicy sausage if you like. I used mild because I want to be able to control how much chili pepper flakes I’d like to add to the soup. This is a hearty and very comforting soup.
Ingredients
1 lb. mild or spicy Italian sausage, without casings
2 medium size potatoes, peeled, cut into cubes
2 medium size zucchini, cut into bite sized pieces
1 15 oz diced tomatoes, or 4 diced fresh tomatoes
1 carrot, cut into thin strips
1 bell pepper, deseeded cut into bite sized pieces
4 garlic cloves, minced
1 onion, sliced
4 stalks celery, sliced
1/4 teaspoon red chili pepper flakes, add more if you want more heat
3 tablespoons olive oil
1 tablespoon dried basil
1 tablespoon dried thyme
1 1/2 cups chicken broth
handful of fresh basil
salt to taste
Instructions
-1. Heat a soup pot with oil. Sauté garlic and onion, season with salt and red chili pepper flakes.
-2. Add the Italian sausage and cook for 2 minutes or until there’s no more pink. Constantly stirring until the sausage is fully cooked.
-3. Add all the vegetables, stir to combine, add the dried herbs, tomato paste, and diced tomatoes.
4. Add the chicken broth, stir together, cover, simmer for 1-2 minutes or until the potatoes are tender.
-5. Add Parmesan cheese, stir to combine, add the fresh basil. Remove from the heat and serve while hot.
