This triple berry no-bake cheesecake is made with a smooth cheesecake filling, bursting with fresh and juicy berries. The crust is made with graham cracker crumbs and a touch of butter, adding a perfect crunch to every bite.
Combine graham cracker crumbs and butter, and stir until the crumbs are moistened.
Use a glass and press to press the crumbs on an 8" tart pan or pie dish. Make sure to press on the sides to form a crust. Refrigerate for 30 minutes or until firm.
FOR THE CREAM CHEESE FILLING
Meantime, place the cream cheese in a bowl and mix until creamy.
Add the powdered sugar and continue mixing until combined.
Add the heavy cream and vanilla and mix until smooth.
Pour the cream cheese filling into the prepared crust. Use a spatula to smooth the top. Refrigerate for 2 hours or overnight.
FOR THE TOPPINGS
Cut the strawberries in half and fan out on top of the cream cheese (or use them whole). Then sprinkle the rest of the berries around.
Drizzle honey on top.
