Sweet and Sour Pork

- 2 tablespoons low sodium soy sauce
- 3 tablespoons oyster sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1 tablespoon tomato paste
- 1 tablespoon brown sugar
- 1 pound boneless center-cut pork, cubed
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 3 tablespoons oil
- 1 yellow onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, deseed and cubed
- 2 green onions, sliced
- 1 cup pineapple chunks, optional
Make the sauce by combining, soy sauce, oyster sauce, apple cider vinegar, honey, tomato paste, and brown sugar.
Season the pork with salt and pepper. Add the cornstarch, and toss to coat.
Heat the pan with oil, add the pork, and cook until golden brown on both sides. Remove from the pan and set them aside.
Use the same pan, add more oil if needed. Add the onion, and saute until tender. Add the garlic, and continue sauteing until fragrant.
Add the bell pepper (optional, pineapple), stir to combine, and cook the bell pepper until tender.
Add the sauce and the cooked pork back into the pan. Stir, and simmer until the sauce thickened. Serve with steamed rice.
