Homemade Apple Hand Pies

Ingredients

of Pie Crust,

green
apples,
peeled, deseed, small cubed
1
tablespoon
fresh lemon zest
2
tablespoons
honey
2
tablespoons
butter,
cut into cubes
2
tablespoons
cinnamon
1
tablespoon
cornstarch
1/4
cup
brown sugar
pinch of salt
Egg Wash
1
egg
yolk
splash of water
Instructions
In a heated saucepan, add all the ingredients. Constantly stirring until thickened. Set aside to cool.
Meantime, pre-heat the oven to 350ºF. Line a baking sheet pan with parchment paper.
Dust a surface with flour, roll the dough in about 12" diameter. Use a 3-4" inch cookie cutter or lid to cut the dough into circles.
Place a spoonful of filling in the middle of the dough. Pinch the edges to close. Line the hand pies into the prepared pan.
Use a fork and press the edges. Place the hand pies in the fridge for 30 minutes.
When ready, brush with egg wash, bake for 30 minutes or until golden brown.
