Easy Pork Skillet

FOR THE PORK
- 1 pound pork loin or boneless pork chops, cut into thins strips
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
FOR STIR FRYING
- 2 tablespoons olive oil
- 1 red bell pepper, sliced and deseed
- 1/2 red onion, sliced
- 1/2 teaspoon garlic powder
- salt to taste
- a handful of parsley, for garnish
FOR THE BALSAMIC HONEY GLAZE
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 garlic clove, grated
- 1 teaspoon thyme
- salt and pepper to taste
- 1 tablespoon olive oil
Heat the skillet with olive oil. Add the slices of pork, sear for 3 minutes or until golden brown. Set them aside.
Use the same pan. If the pan is drying up, add more oil. Add the bell pepper and onion, and saute until crisp-tender. Season with garlic powder and salt and pepper, and stir to combine (see NOTE)
Add the cooked pork, and pour the balsamic glaze. Cook until well heated. Garnish with parsley, and serve with steamed rice or salad.
NOTE: You can use any type of vegetables you like or add more vegetables to this dish if you like. Double the recipe so you can have some leftovers for tomorrow's lunch or dinner.
