Instructions
Heat a pan with oil. Saute the garlic and onion, add the peppers, stir, cook until tender. Season with paprika, turmeric, chili paste, salt, and black pepper.
Add the zucchini, stir, cook for 1 minute or until tender. Add the cilantro and scallions, stir to combine. Add the rice, frequently stir until well heated. Add the lemon juice, stir to mix well. Remove from heat, serve immediately.
OPTION: You absolutely can add your seafood and meat.
HOW TO COOK BROWN RICE:Rinse the rice, and in every one cup of brown rice, add 2 1/2 cups of water. Uncover, bring to boil. When boiling turn the heat to the lowest, cover and simmer until all liquid is absorbed. Fluff the rice by using a fork.
