Waffles with Berries Compote
Sometimes it’s harder to think what to eat in the morning especially if our schedule is a little tight. This waffle recipe will help ease our busy mornings. You can prep and make these waffles ahead of time and freeze them, just heat them up in the morning and drizzle your fruit compote. Great to have with your green smoothie – and you’re good to go. It makes a big difference when we prep our meals, it’s time and sanity saver haha!
Recipe for the waffles:
Ingredients
- 3 bananas
- 1 cup oats
- 1/4 cup oats
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 tablespoon coconut oil, melted
Instructions
- Preheat a waffle maker and grease with oil. Place all ingredients in a food processor and processor until smooth. Pour about 1/4 cup batter into the waffle maker and when it’s firm and doesn’t stick anymore then it’s done. Place them on a platter and set aside.
Recipe for the compote:
Ingredients
- 1 cup berries, your choice
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 2 teaspoons pure maple syrup
Instructions
- Place all ingredients in a saucepan. Bring to a boil, stir to mix. Cook to desired consistency. Remove from heat, drizzle on top of waffles.
