Veggie Dinner

I decided to make a Veggie Dinner today to enjoy the natural flavors from different spices and to boost our immune system. You’ll get all 3 recipes that are delicious and very simple. You probably have most of these ingredients already in your pantry.

Recipe for the Lentil Soup

Ingredients

3/4 cup red split lentils, or you can use regular lentils too

2 cups vegetable stock

2 Roma tomatoes, diced

1 bunch asparagus, trim the ends and cut into pieces

1 cup shredded cabbage

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon tarragon

1 teaspoon 21 seasoning salute

1 inch sized ginger, peeled and minced (about 1 tablespoon)

a pinch of red chili pepper flakes, or regular black pepper

salt to taste

Instructions

-1. Heat a pan with olive oil. Sauté garlic and ginger, add the tomatoes, stir to combine.

-2. Add the seasoning, salt, chili peppers, tarragon, and 21 seasoning salute. If you cannot find these seasonings right now – just use salt, black pepper, onion powder, and garlic powder.

-3. Add lentils, cabbage, asparagus, and vegetable stock, stir, cover simmer for 2 minutes or until the veggies are tender.

Recipe for the potatoes

Ingredients

5 medium sized golden potatoes, peeled cut into wedges

1 teaspoon garlic powder

1 teaspoon 21 seasoning salute

2 springs of fresh rosemary

2 tablespoons olive oil

Instructions

-1. Preheat the oven to 400 degrees F. ( you can bake the potatoes together with chickpeas in a separate pan). Line a baking sheet pan with parchment paper.

-2. Lay the potatoes on the pan, drizzle with oil, season with salt, chili pepper, 21 seasoning salute, and rosemary.

-3. Toss and coat evenly. Spread the potatoes for even baking. Bake for 30-40 minutes or until fork tender.

This is the 21 Seasoning Salute

There are actually 21 individual seasoning in the mix. It’s a smooth blend of onion, black pepper, celery seed, cayenne pepper, parsley, basil marjoram, bay leaf, oregano, thyme, savory, rosemary, cumin, mustard, coriander, garlic, carrot, orange peel, tomato, lemon juice and lemon oil. It doesn’t contain salt that’s why it’s so versatile. Shake before using, add it to your soup, stir fry, or even homemade vinaigrettes.

Recipe for the Roasted Chickpeas

Ingredients

1 canned chickpeas, rinsed and drained

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1 teaspoon garlic powder

a pinch of red chili pepper flakes

handful of cilantro for garnish

1 teaspoon freshly squeezed lime juice

salt to taste

Instructions

-1. Heat the oven to 400 degrees F (you can bake the chickpeas together with the potatoes in a separate pan). Line a baking sheet pan with parchment paper.

-2. Lay the chickpeas on the pan, drizzle with oil, add all the seasoning.

-3. Toss to coat well, spread the chickpeas on the pan to make sure they bake evenly. Bake for 20-30 minutes or until they caramelized. You have to check them and probably need to be removed from the oven before the potatoes are ready. Squeeze lime and garnish with cilantro.
