Teriyaki Chicken Skewers

You don’t have to use your grill outside to make these chicken skewers, but you need to have a grill pan to get those nice grill marks. The teriyaki sauce is a little sweet with a hint of fresh garlic and ginger. I cooked the sauce first. Then, I used it as a marinade and reserved a couple of tablespoons to baste (or brush) on the chicken after cooking. This sauce is great with any meat you’d like to marinate. Let’s get cooking!

what is teriyaki

  • You’re going to love this sauce! Teriyaki is a thick sauce with garlic and ginger. It’s great for marinating and basting meat. The glossy finish makes it looks so appetizing. Teriyaki is originated in Japan. It combines two words “Teri” means luster and Yaki mean “grill or broil”. In the US it refers to a sauce that adds sweet-salty flavor and an amber-colored gloss to grilled meat and vegetables. You can find the ready-made bottled Teriyaki sauce at the store, but homemade is always a lot better. It’s easy to make and very flavorful.

How to make the teriyaki sauce

You’ll need:

  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1 tablespoon balsamic vinegar 
  • 3 tablespoons oyster sauce
  • 4 garlic cloves, minced
  • 1 inch sized ginger, minced
  • 2 tablespoons light brown sugar
  • 2 tablespoons honey
  • 1/4 teaspoon red chili flakes

How to make it:

  • In a bowl, combine water and cornstarch, stir until the cornstarch is completely dissolved, then set aside. Heat a saucepan, then add soy sauce, apple cider vinegar, balsamic vinegar, oyster sauce, garlic, ginger, brown sugar, honey, and red chili pepper flakes. 
  • Stir, add the cornstarch (slurry), continue stirring until the sauce thickened, about 2 minutes.

Teriyaki Chicken Skewers

Ingredients
  

  • 1 pound chicken breast or thighs, cut into bite-sized pieces
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon balsamic vinegar
  • 3 tablespoon oyster sauce
  • 4 garlic cloves, minced
  • 1 inch size ginger, minced
  • 2 tablespoon light brown sugar
  • 2 tablespoon honey
  • 1/2 teaspoon red chili pepper flakes

Instructions
 

  • Make the slurry, combine water and cornstarch, stir until the cornstarch dissolved. Set aside
  • In a bowl, combine soy sauce, apple cider vinegar, balsamic vinegar, oyster sauce, ginger, garlic, brown sugar, honey, and chili flakes. Stir to combine
  • In a saucepan, add the sauce and slurry, stir until the sauce thickened, about 2 minutes.
  • Reserve 2 tablespoons of thickened sauce for braising later.
  • Pour the sauce over chicken, marinate for 30 minutes. Meantime, soak the skewers in water for at least 5 minutes before grilling the chicken.
  • Thread the marinated chicken on the skewers. Heat a grill pan with oil. Add the chicken and grill for 2-3 minutes on each side or until fully cooked (165ºF inside temperature) and you see grill marks.
  • Baste (or brush) the reserved sauce onto the chicken before serving. Garnish with green onions.

Notes

  • If you have time, marinate the chicken overnight. 
  • You can also use sliced beef or pork meat.
  • Some Asian coleslaw is always nice to have as a side dish.
  • Don’t forget to soak the skewers in water to prevent them from burning when it’s time to grill the chicken.
