Sweet Potato Salmon Patties
The sweet potato goes so well with salmon. The gingery sauce contrast the sweetness that balances out the flavors. I love using a cast iron skillet whenever I’m pan frying but if you don’t have it just use your regular skillet or shallow pan.

Ingredients
1 cup steamed sweet potato
1 lb. or 4 skinless salmon fillets, cut into cubes
3 stalks green onions, sliced
1 egg
1/4 cup Panko breading
3 tablespoons oil
For the sauce
1/4 cup soy sauce
1 teaspoon chili paste ( I used Harissa paste)
1-inch size or thumb-size ginger, grated
1 garlic clove, grated
1 tablespoon maple syrup
2 tablespoons or juice of half lime
Combine all the sauce ingredients. Set aside.
Instruction
1.. In a food processor combine, steamed sweet potato and salmon, season with salt and pepper, blend until smooth.
2. In a bowl combine, the salmon sweet potato mixture, egg, Panko breading, and green onions. Pour the sauce into the salmon mixture, and use a spatula or your hand to mix until well combined.
3. Heat a skillet with oil. Use an ice cream scooper, scoop the salmon mixture into the skillet, use an angled spatula to flatten them, and brown both sides for about 2 minutes.
4. Serve with greens or sliced tomatoes. Drizzle with Zesty Ranch Dressing
