Sun-dried Tomato Turkey Meat Sauce
Not all Parmesan cheese are the same. Fresh good quality Parmesan cheese taste so much better. You can tell by the creaminess of the cheese, if you can get it from local market that get their cheese from a trusted and reputable farm, I guarantee that you’ll be able to tell the difference.
This dish is very versatile. It doesn’t only serve as a sauce to your pasta but you can just eat it by itself with a side of green salad. I eat it with steamed rice too. Oh well, we eat rice with everything!

Ingredients
1 lb. ground turkey breast
28 oz. canned diced tomatoes
1 cup sun-dried tomatoes
2 tablespoons tomato paste
2 tablespoons olive oil
1 cup Parmesan cheese
1 bell pepper, deseed, diced
1 yellow onion, chopped
4 garlic cloves, minced
1/2 cup chicken broth
2 tablespoons honey
2 teaspoons dried basil
1 teaspoon dried oregano
2 teaspoons Italian seasonings
1/2 teaspoon red chili pepper flakes
1 teaspoon salt, add more if needed
Parsley and fresh lemon thyme for ganish
Instructions
1. Heat the pan with oil. Sauté garlic and onion, add all the seasonings, dried basil, Italian seasonings, dried oregano, red chili pepper flakes, and salt, stir to combine well.
2. Add tomato paste, bell pepper, stir to combine. Add the turkey, constantly stirring until the browned or fully cooked. Use cooking spatula to separate the turkey into smaller pieces.
3. Add sun-dried tomatoes, chicken broth, honey, and diced canned tomatoes, stir to combine. Cover, lower the heat, simmer for 3-4 minutes. Add Parmesan cheese, and garnish with parsley and lemon thyme.
