Pochero (Beef Stew)
Pochero is a Filipino version of beef stew. I made it the traditional way with plantain banana and sweet potato. It’s spicy but the sweet potato and banana give the dish a balance flavor. Even though I used tender cut beef I still pre-cooked them in my Instant Pot to save time.

Ingredients
8 oz. tender but beef, cut into bite sized pieces
1 cup green cabbage sliced
1 plantain banana, sliced
1 sweet potato, sliced
1 bell pepper, sliced
2 yellow potatoes, cubed
1 yellow onion, chopped
3 garlic cloves, minced
4 Bella mushrooms, sliced
a pinch of red chili pepper flakes
1/4 cup soy sauce
2 tablespoons tomato paste
3 cups beef broth
vegetable oil, for frying
for the spices
1 tablespoon chili powder
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon turmeric
2 bay leaves
Instructions
1. Pre-cooked the beef in a pressure cooker or Instant Pot, set aside. Heat a pan with oil. Fry the bananas and sweet potato until they turned golden brown and tender. Set aside
2. In the same pan, add onion and garlic, sauté until tender, season with salt and red chili pepper flakes. Add the spices and tomato paste, sir to combine. Add the potatoes, stir, sauté for a minute.
3. Add the beef broth, bay leaves and soy sauce, stir, cover, simmer for 2-3 minutes or until the potatoes are tender. Add mushrooms, bell pepper, cabbage, and the pre-cooked beef, stir to combine.
4. Add the fried plantain bananas and sweet potatoes, stir to combine, cover, simmer for a minute. Serve with steamed rice.
